Question:
Like their Si jou (Cheung Ng) before them, Hung Fa Yi practitioners emphasize that there is only one most efficient way to use Tan Sau when time and space are taken into consideration. There is one way to enable simultaneous attack and defense. Like their predecessor, they can express the entire system through this single hand.

How do you interpret this statement?

Hello,
Sure no prob to get the ball rolling here how is this, if you know all the concepts and principles of Hung Fa Yi Wing Chun Kuen you will be able to visibly recognize them as they are expressed in the movements used in performing a single tan sau. It is possible to witness things such as 6 gate theory, centerline theory, gei jong, mun jong, saam din yaat sin, leung yi ma and the rest all expressed through the use of one technique.
The key is you have to know what it is you are looking at first.

I'd make it even simpler. Since HFY is designed (from a physical combat perspective) to express maximum efficiency of time, space, and energy, then as long as that maximum efficiency is achieved, I'd say that ANY wc "hand" could be used to express the system. Since Taan Sau is a unique "hand" to WC, it seems a natural one to pick.

That is a good point, question would fuk fit into that expression as well? The reason for asking about fuk is because it too is also considered a pillar of wing chun.
